Bar restaurant business here is tough - but some really good ones make it big.
Carumba's is the best example I know. Started samll and each off season close for a month and expand. Their secret??? SERVICE and with a smile. They are packed every night.
Stained Glass Pub had a regular clientel (I was one)but any time Marie (the owner/chef) could not be there the food was unpredictable.
You have to be really dedicated to make it here. There is a lot of competition.
I agree completely... Service, above and beyond is the hallmark of a great and successful business. If you are not a dyed in the wool "people person" a bar is not for anyone.
