Boil Up is the second staple food of Belize. This dish is a compilation of healthy and non healthy starches. Every item in this menu is boiled, from the ground foods, to the meats (pigtails & fish) to the eggs, to the cakes. This meal is usually topped with coconut oil and a sauteed onion and tomato sauce. This meal can be eaten in its full form or scaled down to match any budget.

I like to think of Boil Up and po man or rich man's dinner. If you have all the ingredients great, but if you don't you can still have delicious meal.

Boil Up Sauce

I made this recipe as a separate video that the Boil Up meal because we will use this sauce in the future for other dishes. Many Belizean recipes are interchangeable, with many dishes being the base to build another dish.

This is a Belizean Kriol recipe. Kriols descend from the African slaves of the English and Scottish woodcutters that settled in Belize in the 17th century, and this dish has strong African elements, from the vegetables used to the practice of combining ingredients in a stew.

Ingredients

2 lbs fish ( I usually only use the pork and omit this)
1 small pig's tail, with fat trimmed or a piece of salt pork
2 eggs
1 yam
1 cassava
2 large sweet potatoes
2 ripe plantains
4 green bananas (I usually omit this)
2 cups of water
2 tsp baking powder
� cup of water, as well as a large pot of water
3 fresh tomatoes, or a can of chopped tomatoes
1 onion
Salt and pepper

Method

First, prepare your boil cakes.

Mix together the flour, baking powder and water, and knead the mixture into a soft dough. Separate this into balls about 3 inches wide, then flatten.

Then make a tomato sauce. Chop and lightly fry the onion. If you're using fresh tomatoes, skin them and chop into small cubes, before stirring into the onion and simmering lightly. You can also use canned chopped tomatoes. Add salt and pepper to taste.

Peel the vegetables and chop into large cubes about 3 inches wide. Boil them in a large pot of water until tender, along with the pig tail.

Place your boil cake dough on top of the vegetable water for the last few minutes of boiling.

Remove the vegetables and boil cakes, leaving the pig tail in the water, and cook the fish (if you are adding this) in the same water until tender.

Lastly, hard boil the eggs in the water. Cool with cold water, peel and serve as a garnish.

Serve everything together, and pour the tomato sauce on top.

Belizean Boil Up | Smacking Noises

Joe and I eat our favorite Belizean Dish. Boil Up is can be a poor man's dish or a rich man's entree. It consists of ground food, eggs, fish and pigtails.

How To Make Belizean Boil Up

Boil up is a dish that normally uses 3 different meats and a bunch of ground food (healthy carbs). This recipe is the full version, but you can do a scale down version with less meat or no meat. The sauce can be replaced by just coconut oil and some of the ground foods can be omitted.

Virginia Melendez has been cooking for 20 years, and as the proud owner of Itza Belizean Place eatery in downtown San Pedro, provides special items like hudut, boil up and more. With her repertoire and reputation preceding her, it made sense to taste her version of the boil up. Taught by her mother to make this dish, Virginia served up a beautiful plate complete with whole fish, some ground food, a sauce and the classic boiled cake.

A combination of tomatoes, coconut oil, fish, root vegetables, a surprisingly light dough disc that had been boiled to perfection, and years of tradition, all came together for a 'boil up'. There really is no better name that that, because that's just what it is! I can't wait to hit up some more items now!
