WHEW! I'm worn out just reading your post. Why do you want to jump all around when you can do all those things from Ambergris Caye?
Hubby can reef dive in the morning and it is wonderful and can be done every morning while wife reads by the pool watching son splash. Then wife shops her heart out walking around town while hubby teaches son to snorkel under the docks. Get a babysitter and go out to dinner and dancing at one of the really fun places within walking distance.
Take a long romantic walk home on the beach in the moon light.
The whole family can take the one day boat trips inland; cave tubing, ruins, etc.
Hubby can do a one day (or over night) trip out to the atolls; Lighthouse or Turneffe.
All this can be done while staying at one reasonably priced resort with a pool. There are many listed in the lodging section of this board.
I wouldn't put it off one day longer than necessary.
